Apple cake 3

Pauline has fond memories of watching her grandmother make this cake over and over again. We hope you enjoy its rich, caramel-like flavors and dense, moist texture. Perfect with whipped cream on a chilly evening or in the morning with hot coffee!

This cake requires 4 c. of pears (about six pears), peeled, cored, and diced. It helps if the pears are not quite ripe. We recommend bosc, comice or bartlett.

Mix together:

2 c. sugar

2 eggs

1/2 c. oil

2 t. vanilla

2 t. soda

1/4 t. salt

2 1/4 c. flour

1 t. ground cloves

1 t. ground allspice

1 c. toasted, chopped walnuts

At this point, the dough will be very stiff until you add the pears. Go ahead and add the pears. Don’t overmix once you’ve added the pears or you’ll mush them down into sauce!

Bake in a greased 10 1/2″ x 16″ glass pyrex baking dish at 300 degrees for approximately 50 minutes or until the toothpick comes out clean. This cake burns easily, a glass baking dish is best.
